Busy Weekend in Williston | Video

Carol Ann Ginther has been running the Economart deli for 17 years. Every year she dreads the amount of work for one weekend in particular, this one.

"Well this weekend we`re really exceptionally busy because of graduation, along with all of our oil field caterings that we do. We`ve got the ball games at the rec center, tons of trays to make, bakery, produce, we`re all really, really, busy”, Said Ginther.

The WDA baseball tournament, graduation, and Memorial Day all come together to create a perfect storm for the deli.

"It takes everybody, the whole crew. Everybody pitches in, everybody is versatile and can do multiple things, but it really takes everybody”, Said Ginther.

On an average weekend this crew has to make between 5 and 10 party trays. This weekend, that number will be closer to 200. In addition to catering events with sandwiches and meat and cheese trays, they have to keep up with all their daily duties as well. One big event per weekend is enough, but two or 3?

"It makes for double the work”, Said Ginther.

As the busy weekend approaches, this deli will do their best to make sure party-goers stay well fed.
